Kayaking is a variant of canoeing, used by the Inuit.
It differs from the "classic" canoe, ie the Canadian one, because it is designed to be moved and maneuvered by a double blade paddle. The Canadian canoe, on the other hand, is pushed and maneuvered with the use of a single-blade paddle.
The word kayak means "men's boat", as opposed to umiak, "women's boat". The first kayaks were made of wood covered with animal skins and were built directly by the men who intended to use them.
