An exciting research experience of the precious black truffle of Umbria walking through the wonderful Valnerina countryside, completed by a cooking class with a final tasting lunch.
The group will be accompanied in various stages by a truffle (or quarryman), the chef and the staff of the host company.
The first approach involves the research and quarrying of truffles with the fundamental support of trained dogs, which will demonstrate concretely how truffle hunting takes place.
Following, an interesting and fascinating cooking lesson, discovering the secrets of the black gold of Umbria. As soon as you come back from the hunt, you will have a demonstration of how you can cook the truffle to enhance its qualities: how to prepare the base sauce, which oil to use, the truffle with the eggs, ideas for appetizers, for first courses and for the main courses of meat and fish.
Guests will then be accommodated in the reception hall of the restaurant and will be presented to them a lunch with truffle-based dishes.
You will taste the black truffle of Valnerina highlighting, according to each period of the year, the organoleptic characteristics, always favoring the combination with typical local and seasonal products. The choice of wines identified to enhance the truffle will be explained by the restaurant sommelier. The tasting will end with desserts and fruit.
